Meet the Founders – Alsies of Peachtree City, Taylor Ruby, Mom to Henry(8), Grayson (4) & Jolene (2), and their Aunt, Dylan Ruby, both  residing in Peachtree City. In our Q&A, Taylor shares how bringing the Alsies’ Modern Day Ice Cream truck, offering gormet ice cream treats for the whole family (like the Nightingale Ice Cream Sandwich!!) to the vibrant, family-focused community of Peachtree City is all about “sharing smiles, building community, and making space for the small joys that make life feel big”!

What is your background? Tell us about your career/s. 

Taylor Ruby — A mom, luxury travel advisor, and someone who’s spent years in the hustle of the food and hospitality world. A Culinary Institute of America trained Pastry Chef and hospitality professional who worked with incredible luxury hotel brands such as Belmond and Ritz-Carlton. It was an exciting and busy time,  but once I became a mom, everything shifted.

Like so many of us, I wanted more flexibility, to be present for the little moments without giving up the joy of doing work I love. That’s when my college best friend and I launched Ruby Rosen Travel, a luxury travel agency built to serve families, couples, and anyone craving meaningful travel experiences.

I wasn’t necessarily searching for another venture (my hands were already pretty full — hello, toddler snacks and sports schedules). But when we discovered the Alsies Ice Cream Truck franchise, it just clicked. It felt fun, family-friendly, and a perfect fit for our Peachtree City community. Because honestly, who doesn’t love a little ice cream joy on wheels?!

Now, I get to blend my background in hospitality with my love for creating smiles, all while staying close to the people who matter most.

Dylan Ruby A Licensed Professional Counselor with a heart for helping others and a deep belief in the power of connection. After more than a decade working in mental health and addiction treatment centers, I made the leap into private practice to create more flexibility and space for the kind of life I wanted to build. That’s how Dylan Ruby Counseling was born, a practice focused on helping people reconnect with themselves and create meaningful change.

Around the same time, my sister and I stumbled upon the Alsies Ice Cream Truck franchise. It felt like one of those serendipitous moments where everything just aligned. I loved the opportunity to build something with my sister, a business that’s completely different from therapy, but rooted in the same core value: helping people smile more.

Before and during graduate school, I spent years working in restaurants and I’ve always believed that food has a unique way of bringing people together. That sense of connection, whether around a table or through a shared sweet treat, is what brings joy, lifts our spirits, and helps us move through life’s challenges with a little more lightness. I’m all about creating moments that matter and now, with the ice cream truck I get to do just that — share smiles, build community, and make space for the small joys that make life feel big.

What inspired you to bring Alsies to Peachtree City? 

We were lucky enough to try a Nightingale Ice Cream Sandwich and honestly, we were hooked from the first bite! The person who introduced us to it mentioned an ice cream truck in Raleigh that was selling them, and we couldn’t help but be intrigued. We went home, Googled Alsies, and set up a call right away. When we connected with founders Travis and Walker, we were completely blown away. These passionate entrepreneurs took the classic ice cream truck and upgraded it into today’s digital age. Gone are the days hoping to catch the ice cream truck jingle outside your house, now you know when it’s coming and can track it in real time.

With Peachtree City’s vibrant, family-focused community, we knew a modern ice cream truck would be a great addition. We’re not just about the kid-friendly classics (though those are always a hit), we also serve gourmet treats that the grown-ups will love too. 

Please share all of the services Alsies of Peachtree City will offer to the community? 

Alsies Ice Cream Truck is all about bringing back that neighborhood magic — just like the good ol’ days when the ice cream truck made its rounds. Our core service is hitting the streets in your neighborhood, spreading smiles and serving up sweet treats.

But we don’t stop there! You can also reserve our pink truck for any event you have in mind. From school fundraisers and kids’ birthday parties to sporting events and neighborhood pool hangouts, we’re here to make any occasion a little sweeter.

What really sets us apart and makes us so connected to the community is the Alsies App. It’s like having a direct line to your favorite ice cream truck! By seeing which neighborhoods have the most app downloads, we can tell exactly where the excitement is and they are ready for us to swing by.

Once you download the app, you’ll get notifications when the truck is coming to your neighborhood, plus real-time tracking so you’ll never miss us. And if you’re wrangling kiddos or just need a minute to throw on your shoes, you can tell the driver to wait a minute while you make a quick dash outside. We want to make it as easy as possible to enjoy those sweet moments with us — no rush, no hassle.

What is your favorite “mom hack”?  I’m not sure if I have a “mom hack” — except maybe to just care a little less about the small stuff. The more kids you have and the more life you live, the clearer it becomes what really matters to you and your family. All those little stresses just sort of fade into the background. Honestly, everything gets a whole lot easier when you’ve got an Auntie Dylan who’s a second mom to your kids. So we are very blessed in that sense.

What do you love about Peachtree City and the surrounding areas? 

Sense of community is the easy answer. It’s a place where people really look out for and care about each other. Another plus is being so close to Atlanta and the ATL Airport. This gives us the best of both worlds, easy access to everything while still feeling like you’re in a peaceful, close-knit town. Then of course the golf cart paths that give the area such a fun, unique vibe! They make getting around feel easy and social, encouraging everyone to connect in a way that you don’t always see in other places.
